Chicken & Waffles

                                                    Fried Chicken & Waffles

 This is a great recipe that i use often. It may take two days buts its worth it. Its a method that includes using a water brine to season the chicken.It looks like a lot of work buts it’s not. If you have the time and space in the kitchen, try it out. This recipe is guaranteed to make you a success at any event. Ingredients: 

1 gallon water

1 cup kosher salt

1 cup honey

5 lemons cut in half

(Make sure to squeeze out juice)

1 bulb garlic cut in half
1 bunch thyme
1/2 bunch parsley
1 bunch rosemary
1/4 cup black pepper corns
3-5 bay leafs
2 whole chickens
1 bowl, bucket,pot or anything
That can hold all of the above and fit in your refrigerator.

In a sauce pot add the water salt and honey. heat until honey and salt has dissolved.

Remove from heat add all the remaining ingredients except the chicken.

Allow mixture to cool completely before adding the chicken

Place chicken in your pan of choice and pour mixture.( none as a brine)
Over chicken.

Chickens float so you may have to place a small bowl or something  on top of the chickens to weight them down.

They need to remain submerged underwater until the next day.

Remove chickens from brine and towel dry

Allow the birds time to air dry

While the birds are drying prepare the mixture for frying the chicken.

2 -3 cups flour seasoned with salt pepper and garlic powder.

2 cups butter milk with a splash of tobassco sauce.

1 pan to fry chicken or you may use your deep fryer if you have one.

It will be your choice of oil to fry your chicken in. Corn, vegetable, canola or a blend will work. But you will need at least 3 cups.

Cut chickens into 8 pcs removing the legs and wings.

To prepare chicken

Take one piece of chicken and place it into buttermilk coat well.

Remove chicken and  place it into
Flour mixture making sure to work flour into chicken coating it well

Repeat with the remaining chicken

Fry the chicken at 325 degrees for 8-12 minutes or until it’s cooked to a temperature of 165 degrees. 

For the waffle your on your own, a store bought waffle works well.But it’s always best, to make them fresh! *Place your fried chicken over the waffle and serve with honey or maple syrup.
