Seared Sea Scallop with Spinach and Sambuca   by Chef Cha-Chi
This is a signature dish of mine. It is very simple to prepare and should make you look like a pro. This recipe can either be served as an appetizer or a dinner entre. This Recipe will serve four appetizer portions and can be adjusted to fit your needs.
8- sea scallops
1- bag of triple washed baby spinach(any type of spinach could be substituted)
2-cloves garlic
1-shallot or small onion
Half cup sambuca
2- slices pancetta or bacon
Olive oil
Half cup champagne vinegar or red wine vinegar
2-table spoon sugar or honey
1-bunch frisee, arugula or any other type of similar salad greens(watercress or mache)
Salt and Pepper

Clean and wash scallops, pat dry and set aside.
Chop spinach into small pieces.
Finely Chop garlic and shallots.
Finely Chop pancetta.

Make vinaigrette by zesting lemons into a bowl,then squeeze the juice from both lemons. Add olive oil sugar,salt,pepper and a pinch each of the garlic and shallot.
Whisk or blend all, season to taste.
Heat saute pan. Add teaspoon butter and a splash of olive oil. Add pinch each of garlic and shallot. Saute until soft. Add pancetta then Add half the sambuca to the pan. Cook until pan starts to become dry. Add spinach to pan cook for one minute remove spinach and set aside.
Clean pan and return to heat. Add teaspoon butter and a splash of olive oil. Season scallops with salt and pepper. Place scallops one by one into pan. Cook scallops until golden brown and a slight crust appears. Flip scallops and cook next side until golden brown. Remove from pan and set aside.
To plate:
Make small mound of spinach in center of plate. Top with two scallops.
Pull frisee apart and season with vinaigrette. Place small amount of salad next to scallops.
Drizzle plate with a small amount of vinaigrette and then drizzle plate with small amount of sambuca.
Serve with french or italian bread.
Dish can be made with or without pancetta.
To serve as an entre double the amount.  4 scallops should work.



 Pretty interesting what pamphlet’s people pass out in the streets these days. I’m just trying to get my pork sandwich on the other day and this is what some cuban guy gives me. Looked like some scary shit, so i put it in my pocket. Come to find out it some “Praise the Lord” type pamphlet. Hey God Bless everyone, but who’s the guy that designs this stuff. I’m really confused!

After about a dozen martini’s and a 40 oz. in the back of some dude’s van, we got dropped off at a subway station in Brooklyn after a house party. We jumped the turn style as always and ghost ride our skateboards down some big ass subway stairs. Wasted. We were bugging out waiting for the train and this freak that’s in the photo fell in love with us. She pulls out this polaroid camera and makes her friend take a shot of us. Next thing you know our train pull’s up and we jump on. These chicks were on some dumb shit and were waiting for the train going the other and wouldn’t show me or Just the photo. So right before the door’s closed on the train for some reason she held it up and Boom, i snatched it out of her hands as the door shut. Some good timing i remember for being so drunk and i’m glad that i did the right thing and snatched this from her. Justin was my brother from another mother.  R.I.P. Homie “Never Forget”

Yes, we are the one’s responsible for this gold front trend. I’m not one to boast and brag about our track record. But you have to peep game on who flip’s iconic graphic’s first. Especially these days with all the credit whores in the mix. I got my first MISFITS record from my next door neighbor when i was 10 years old, in 1984. So what would i know.
